Dried and Redispersible Cellulose Nanocrystal Pickering Emulsions

Abstract

The effect of tannic acid (TA) and water-soluble cellulose derivatives on the properties of Pickering emulsions stabilized by cellulose nanocrystals (CNCs) was investigated.
